Sustainability

White Maple Café is deeply committed to environmental and social change, and seeks to make an impact in the world through its unwavering dedication to sustainability.  We follow the guidelines and values of international organizations to serve food that we are proud to bring to our community. White Maple is a carbon neutral restaurant, as our annual donations to The Ocean Foundation and its Seagrass Grow project help to plant 4,300 square meters of seagrass. Seagrass meadows are integral to the health of oceans, providing protection from shoreline erosion, filtering pollution from water, and capturing carbon at rates two to four times greater than tropical rainforests. White Maple Café's donations help offset approximately 50 tons of carbon annually, effectively neutralizing our carbon footprint.

 
 

Sustainable Seafood

We are a Monterey Bay Aquarium Seafood Watch partner, which means all of the fish we serve is from populations that are plentiful and in good health and is caught or farmed sustainably. We work hard to build awareness about ocean-friendly seafood choices and encourage our guests to help by asking questions and making sure they are purchasing traceable seafood whenever possible. White Maple Café works with Sea To Table, in addition to other socially-responsible organizations, to source as much wild-caught domestic seafood as possible and to minimize our carbon footprint.


Grass-fed Beef

Grass-fed cows spend their entire lives eating grass. Most cows are fed grain to fatten them up, which means grass-fed beef is leaner and healthier. White Maple Café serves only organic, 100% grass-fed beef from Reunion Foods and Silver Fern Farms that is humanely raised and antibiotic and hormone free.

Pasture-raised Heritage Pork

White Maple Café partners with farmers who do what they do with integrity. All the pork we serve is from pasture-raised, hormone and antibiotic free, heritage breed pigs. We are proud to support Nature's Choice Farm, La Quercia, and Nicolosi Fine Foods in sourcing all our sustainably-raised bacon, chorizo, prosciutto, and pork shoulder.


Free-range Poultry

All of our chicken and duck comes from Goffle Road Poultry Farm. Goffle Road carefully follows all organic practices; their poultry is free-range and free of antibiotics, hormones, steroids, and animal by-products. The farm is in the process of being certified organic. White Maple Café is proud to support them.
