White Maple Café is deeply committed to environmental and social change, and seeks to make an impact in the world through its unwavering dedication to sustainability. We follow the guidelines and values of international organizations to serve food that we are proud to bring to our community. We seek to inspire change in the way people eat, the way restaurants do business, and the way we treat our environment.
We have recently made a commitment to neutralize our carbon emissions, and going forward 1% of our profits will be donated to The Ocean Foundation to support their SeaGrass Grow project and restore critical marine habitats.
White Maple Café is a Monterey Bay Aquarium Seafood Watch® partner, which means we work with Seafood Watch to provide our guests only environmentally responsible seafood. All of the fish we serve is from populations that are plentiful and in good health and is caught or farmed sustainably. Additionally, the fishermen who catch these fish must do so in an environmentally ethical manner, being careful not to damage the surrounding ecosystem or other marine life. We strive to build awareness about ocean-friendly seafood choices and encourage our guests to help by asking questions, making sure they are purchasing traceable seafood whenever possible, and supporting merchants that commit to making these choices. White Maple Café works with Sea To Table, in addition to other socially-responsible organizations, to source as much wild-caught domestic seafood as possible and minimize our carbon footprint.
Grass-Fed & Free-Range Meats
White Maple partners with farmers and ranchers who raise their animals humanely, sustainably, and without hormones or antibiotics. The only beef we serve is organic, 100% grass-fed beef from Reunion Foods. All of our pork is from pasture-raised, domestic heritage breed pigs. We are proud to support Nature's Choice Farm and Nicolosi Fine Foods in sourcing all our sustainably-raised bacon, chorizo, and pork shoulder. All of our poultry comes from Goffle Road Poultry Farm in Wyckoff, NJ. Goffle Road carefully follows all organic practices; their poultry is free-range and free of antibiotics, hormones, steroids, and animal by-products. The farm is in the process of being certified organic.
White Maple has partnered with MAC Gardens in Andover, NJ to source much of our produce each year between May and November. White Maple sources delicious tomatoes, Tuscan kale, asparagus, and much more from MAC Gardens. MAC Gardens is less than 50 miles from White Maple, and serving produce from their farm helps us to maintain a small carbon footprint. We are proud to support them. Carbon Neutral - 1% of profits donated to The Ocean Foundation
White Maple makes every effort to minimize its carbon footprint; we purchase our ingredients from local farms and sources whenever possible. We also use LED lighting, high-efficiency hand dryers and toilets, low-spray valves, and recycled paper takeout containers. We only give out straws upon request. However, our operations still produce carbon emissions, so we have partnered with The Ocean Foundation and now support their SeaGrass Grow project to offset our emissions and restore critical marine habitats. We donate 1% of profits every year to help to plant acres of seagrass annually. Seagrass meadows are integral to the health of oceans, providing protection from shoreline erosion, filtering pollution from water, and capturing carbon at rates 35 times greater than Amazonian rainforests. White Maple's donations help offset and effectively neutralize our carbon footprint.
